Ingredients

  • 300 g (2 ½ cups) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 120 g (½ cup) unsalted butter, softened
  • 150 g (¾ cup) granulated sugar
  • 100 g (½ cup) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Gel food coloring (pink, purple, blue — or your choice of unicorn colors)
  • 100 g (½ cup) granulated sugar (for rolling)
  • Rainbow sprinkles

Instructions

  1. In a bowl, whisk flour, baking powder, baking soda, and salt.
  2. In another bowl, beat butter, sugar, and brown sugar until creamy.
  3. Add egg, vanilla, and milk, mix well.
  4. Gradually stir in dry ingredients until a dough forms.
  5. Divide dough into 3–4 portions.
  6. Tint each portion with different food coloring (pink, purple, blue, etc.).
  7. Chill dough for 30 minutes (makes shaping easier).
  8. Take small pieces of each colored dough and gently press together into a ball for a marbled effect.
  9. Roll each ball in granulated sugar.
  10. Place on a baking sheet lined with parchment.
  11. Preheat oven to 175°C (350°F).
  12. Bake cookies for 9–11 minutes, until edges set but centers are soft.
  13. While warm, top with rainbow sprinkles.
  14. Let cookies cool on the tray for 5 minutes, then transfer to a rack.
