  • 1 ½ cups powdered sugar (for glaze)
  • 34 tbsp lemon juice (for glaze)
  • 1 tbsp heavy cream (optional for richness)
  • Fresh strawberries (for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla, lemon zest, and lemon juice.
  5. Alternate adding flour mixture and buttermilk, mixing until just combined.
  6. Divide batter evenly among pans. Bake for 22–25 minutes, or until a toothpick comes out clean.
  7. Cool cakes completely.
  8. In a saucepan, combine strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat until thickened and glossy (about 5–7 minutes). Let cool before assembling.
  9. Whisk powdered sugar with lemon juice until smooth. Add cream if desired for extra silkiness.
  10. Place one cake layer on a plate, spread with strawberry filling. Repeat with remaining layers.
  11. Pour lemon glaze over top, letting it drip down sides.
  12. Decorate with fresh strawberries and lemon slices.
