Delicious Strawberry Cheesecake Cookies that combine the flavors of cheesecake and fresh strawberries in a delightful cookie form.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 8 oz (225 g) cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- 1 ½ cups fresh strawberries, chopped (or frozen, thawed)
- ¼ cup sugar
- 1 tsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water (slurry)
- Powdered sugar for dusting (optional)
Instructions
- In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Scoop small dollops (about 1 tsp each) onto a parchment-lined tray. Freeze for 30–45 minutes until firm.
- In a saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat until strawberries break down and release juice. Stir in cornstarch slurry and cook until thickened (about 2 minutes). Remove from heat and cool completely.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Beat in eggs and vanilla.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients into the wet mixture until combined.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop 2 tbsp of cookie dough, flatten slightly, and place a frozen cheesecake dollop in the center. Cover with another small piece of dough and seal edges. Place on baking sheet, leaving space between cookies.
- Bake for 10–12 minutes, until edges are lightly golden. Remove from oven and immediately spoon cooled strawberry topping onto each cookie.
- Dust with powdered sugar before serving. Enjoy warm or chilled!
