- 2 pounds chuck roast or sirloin beef
- 12 corn tortillas
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 cup beef broth or water
- 2 fresh, ripe avocados
- 1/2 cup sour cream or Mexican crema
- 2 tablespoons lime juice
- 2 cloves garlic
- Oil for frying

- Prepare the Beef: Season your chuck roast generously with salt, pepper, cumin, chili powder, and garlic powder. You can do this step a few hours ahead of time to let the flavors meld.
- Slow Cook: Place the seasoned beef into a slow cooker. Add a cup of beef broth or water to keep it moist. Cook on low for 8 hours or high for 4 hours, until the beef is tender and easily shredded.
- Shred the Beef: Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker, mixing it with the juices for added flavor.
- Prepare the Tortillas: Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side to make them pliable.
- Fill the Tortillas: Place a few tablespoons of shredded beef in the center of each tortilla. Roll them tightly, ensuring the filling is secure.
- Fry the Flautas: In a large skillet, heat oil over medium-high heat. Once hot, carefully add the rolled flautas seam-side down. Fry for about 2-3 minutes on each side until golden brown and crispy. Place them on a paper towel-lined plate to drain excess oil.
- Blend the Ingredients: In a blender, combine the ripe avocados, sour cream (or Mexican crema), lime juice, garlic, and a pinch of salt. Blend until smooth and creamy. Adjust the lime juice and salt to taste.
Notes
- Let the beef sit for a while after seasoning for better flavor.
- For a spicier kick, add diced jalapeños to the beef or avocado blend.
- These flautas can be served with salsa or hot sauce on the side.
