A fun and delicious treat that combines the classic flavors of root beer and vanilla ice cream in a gelatin cup.

- 2 cups root beer (chilled, but not flat)
- 1 packet (7 g) unflavored gelatin
- 2 tbsp sugar (optional, depending on sweetness of root beer)
- ½ cup vanilla ice cream (softened slightly)
- Whipped cream (for topping)
- Maraschino cherries (for garnish)
- Mini straws (optional, for presentation)
Instructions
- In a small bowl, sprinkle gelatin over ½ cup of root beer. Let sit for 5 minutes.
- Warm ½ cup root beer in a saucepan (do not boil).
- Stir bloomed gelatin into warm root beer until dissolved.
- Pour mixture into the remaining 1 cup of cold root beer. Stir gently to keep fizz.
- Add softened vanilla ice cream in spoonfuls, stirring lightly for a creamy float effect.
- Pour mixture into clear serving cups. Refrigerate until firm, about 3–4 hours.
- Just before serving, pipe whipped cream on top, add a maraschino cherry, and stick in a striped straw for the soda float look.
Notes
- Ensure the root beer is chilled to maintain fizz.
- Adjust sugar based on the sweetness of the root beer used.
- For best results, serve immediately after topping with whipped cream.
