Ingredients

  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ¾ cup water
  • ½ tsp cream of tartar
  • 1 tsp pineapple extract
  • 1 tsp lemon extract (or 1 tbsp fresh lemon juice)
  • Yellow gel food coloring
  • Wooden sticks

Instructions

  1. Wash and dry apples thoroughly to remove any wax.
  2. Insert wooden sticks firmly into the tops.
  3. Place apples on a parchment-lined tray.
  4. In a heavy saucepan, combine sugar, corn syrup, water, and cream of tartar.
  5. Stir gently until sugar dissolves, then bring to a boil without stirring.
  6. Cook until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  7. Remove from heat and carefully stir in pineapple extract, lemon extract, and a few drops of yellow food coloring.
  8. Working quickly, tilt the pan and dip each apple into the syrup, swirling to coat evenly.
  9. Allow excess to drip off, then place apples back onto the tray to harden.
  10. Let candy apples cool completely (about 15 minutes) before serving.
