Description

Delicious cookies made with tiger nut flour that are easy to prepare and healthy.


Ingredients

Scale
  • 1 cup tiger nut flour (this is the best brand)
  • 2/3 cup arrowroot flour/powder
  • 1/2 cup coconut oil, melted and cooled slightly

  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar or 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda, sifted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut sugar or use evaporated cane sugar or maple sugar for a lighter color
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line large cookie sheet with parchment paper.
  2. In medium size bowl, stir together dry ingredients: tiger nut flour, arrowroot, collagen, baking soda, cinnamon and sea salt.
  3. Add wet ingredients. Use handheld mixer to combine, without over-mixing.
  4. Use cookie scoop to portion out dough on lined cookie sheet.
  5. Bake 8-10 minutes until edges are golden brown and tops are tinged golden. Allow to cool slightly before serving.
  6. If you’re rolling your cookie dough in cinnamon sugar, scoop each portion and form each scoop into a ball by rolling it between the palms of your hands.
  7. Mix together cinnamon and sugar in a small bowl. Roll each ball in sugar. Place each sugared ball on cookie sheet and flatten just slightly with the palm of your hand by about 1/3.

  • These cookies have a nice crackle top when rolled in cinnamon sugar.
