Ingredients

- 2 cups granulated sugar
- ⅔ cup light corn syrup
- ½ cup water
- ½ tsp cream of tartar
- 1 tsp flavored extract (vanilla, cotton candy, raspberry, or your choice)
- Gel food coloring (blue, purple, pink, turquoise, etc.)
- Edible glitter or luster dust
- Lollipop sticks
Instructions
- Prepare molds: Lightly grease silicone lollipop molds (or use parchment on a baking tray). Place sticks into molds.
- Cook the sugar syrup: In a saucepan, combine sugar, corn syrup, water, and cream of tartar. Stir over medium heat until sugar dissolves. Bring to a boil without stirring until mixture reaches 300°F (hard crack stage).
- Add flavor & color: Remove from heat, stir in extract. Divide syrup into small bowls and tint with different gel food colors.
- Create the galaxy swirl: Pour spoonfuls of different colors into molds, swirling gently with a toothpick (don’t overmix). Sprinkle edible glitter or luster dust for a starry effect.
- Set & unmold: Let lollipops cool completely (about 20 minutes). Carefully remove from molds and store in an airtight container.
