Description
This rich and creamy pasta takes everything you love about chicken pot pie — tender chicken, peas, carrots, and a velvety sauce — and tosses it with pasta for the ultimate comfort dinner. No crust, no fuss, just hearty and delicious flavor in every bite!

- 12 oz (340 g) bowtie pasta (farfalle)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 lb (450 g) chicken breast, cut into bite-sized pieces
- Salt & pepper, to taste
- ½ tsp garlic powder
- ½ tsp onion powder
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups (480 ml) chicken broth
- 1 cup (240 ml) milk or heavy cream
- ½ cup (60 g) grated Parmesan cheese
- 1 cup frozen peas and carrots, thawed
- 1 tsp dried thyme (or fresh, chopped)
- 1 tsp parsley flakes (plus extra for garnish)
- Salt & pepper, to taste
Instructions
- In a large skillet, heat butter and olive oil over medium-high heat. Season the chicken pieces with salt, pepper, garlic powder, and onion powder. Sauté until golden brown and cooked through (about 6–7 minutes). Remove from the skillet and set aside.
- Meanwhile, cook the bowtie pasta in salted boiling water according to package directions until al dente. Drain and set aside, reserving ½ cup of pasta water.
- In the same skillet, melt butter over medium heat. Whisk in the flour and cook for 1 minute to form a roux. Gradually add chicken broth and milk, whisking constantly until smooth and thickened (about 3–4 minutes). Stir in Parmesan cheese, thyme, salt, and pepper. Add peas and carrots, simmering for 2 minutes until heated through.
- Return the cooked chicken to the pan, then add the pasta. Toss until everything is well-coated in the sauce. Add a splash of the reserved pasta water if needed to loosen the sauce.
- Garnish with chopped parsley and a sprinkle of extra Parmesan. Serve warm and enjoy the creamy, comforting flavors of pot pie — in pasta form!
