- 2 ripe avocados (about 400g)
- 4 large eggs
- 4 slices whole grain or sourdough bread
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- Optional toppings: red pepper flakes, fresh herbs, feta cheese
Instructions
- Toast the bread until golden brown, about 5 minutes at 375°F (190°C).
- In a bowl, mash the avocados with salt and pepper until creamy but slightly chunky.
- Cook the eggs to your preference: poach them in simmering water for about 3 minutes or fry them in olive oil until whites are firm and yolks are runny.
- Spread the mashed avocado over each slice of toast and top with an egg.
- Drizzle with olive oil and add optional toppings before serving.
