- ¾ cup maraschino cherries, chopped (plus a few whole for garnish)
- 1 (8 oz) bar white chocolate, chopped
- 1 cup heavy cream
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp almond extract
- Whole maraschino cherries (for garnish)
- Toasted sliced almonds (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Grease and line three 8-inch round cake pans with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add almond and vanilla extracts.
- Alternate adding flour mixture and milk, beginning and ending with flour.
- Gently fold in chopped cherries.
- Divide batter evenly among pans and bake 25–30 minutes, or until golden and a toothpick comes out clean.
- Cool completely before frosting.
- Melt white chocolate with ½ cup cream in a heatproof bowl over simmering water. Stir until smooth, then let cool to room temperature.
- Beat butter until creamy, then add powdered sugar and almond extract.
- Pour in melted white chocolate mixture and whip until fluffy.
- Place one cake layer on a serving plate.
- Spread frosting evenly between layers.
- Frost the top and sides of the cake.
- Pipe decorative swirls on top and garnish with whole cherries and toasted almonds.
