Description
A delightful and creamy blueberry frosting perfect for cakes and cupcakes.
Ingredients
Scale
- ½ cup (1 stick) unsalted butter, softened
- 8 oz (225 g) cream cheese, softened
- 3–4 cups powdered sugar (adjust for consistency)
- ½ cup blueberries (fresh or frozen)
- 2 tbsp granulated sugar
- 1 tsp lemon juice (brightens flavor)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a small saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat until berries burst and mixture thickens (about 5–7 minutes). Strain through a fine mesh sieve (optional, for smooth frosting) and let cool completely.
- In a mixing bowl, beat softened butter and cream cheese until smooth and fluffy. Add vanilla and salt, mixing well.
- Gradually add cooled blueberry reduction. Slowly mix in powdered sugar, 1 cup at a time, until thick and pipeable.
- Use immediately to frost cakes or cupcakes. Garnish with extra blueberries for a stunning finish.
Notes
- Adjust the amount of powdered sugar based on desired consistency.
- For a smoother frosting, strain the blueberry reduction.
- This frosting can be made ahead of time and stored in the refrigerator.
