Berry Cream Brioche Bombs are delightful, fluffy treats filled with berry jam and whipped cream, perfect for any occasion.

- 3 cups (380g) all-purpose flour
- ¼ cup (50g) sugar
- 2 ¼ tsp (1 packet) active dry yeast
- ½ tsp salt
- ½ cup (120ml) warm milk
- 2 large eggs (room temp)
- ½ tsp vanilla
- 6 tbsp (85g) unsalted butter, softened (room temp, not melted)
- Oil for deep frying (canola or vegetable)
- 1 cup raspberry or mixed berry jam
- (Optional) ½ cup chopped fresh berries for extra texture
- 1 cup (240ml) heavy whipping cream, cold
- ½ cup (60g) powdered sugar
- 1 tsp vanilla extract
- Powdered sugar for dusting
Instructions
- Make the Dough: In a bowl, mix warm milk + yeast + 1 tsp of the sugar. Let sit 5–8 minutes until foamy. In a mixer bowl, combine flour, remaining sugar, salt. Add yeast mixture, eggs, and vanilla. Mix until dough forms. Add butter a little at a time, letting it blend fully in between. Knead (mixer 8–10 min / by hand 12–15 min) until dough is smooth and elastic. Cover and let rise 1–1.5 hours, until doubled.
- Shape & Fry: Turn dough out and divide into 10–12 balls. Place on a tray, cover, and rise another 30–45 minutes. Heat oil to 325°F (165°C) — medium heat, not too hot. Fry 2–3 minutes per side until golden brown. Remove and let cool on paper towels.
- Make the Cream: Whip heavy cream until soft peaks. Add powdered sugar + vanilla. Beat to firm peaks, but don’t over-whip.
- Fill the Brioche Bombs: Once brioche is slightly warm/cool, slice them not fully through, like a sandwich bun. Spoon or pipe a generous layer of berry jam. Pipe in the vanilla whipped cream.
- Finish: Dust with powdered sugar. Serve immediately for maximum softness.
