A rich and decadent cake featuring layers of white chocolate, coconut, and almond flavors, perfect for any celebration.

- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter (softened)
- 2 cups sugar
- 4 large eggs
- 1 tsp almond extract
- 1 cup coconut milk (or whole milk)
- ½ cup sour cream
- 8 oz white chocolate, melted and cooled
- 1 ½ cups cream cheese (softened)
- ½ cup unsalted butter (softened)
- 4 cups powdered sugar
- 1 tsp vanilla extract
- ½ tsp almond extract
- 2 cups sweetened shredded coconut (toasted or plain)
- ½ cup sliced almonds, lightly toasted
- White chocolate shavings (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
- In a medium bowl, whisk flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add almond extract.
- Alternate adding flour mixture with coconut milk and sour cream, beginning and ending with dry ingredients.
- Divide batter into pans and bake 30–35 minutes, or until a toothpick comes out clean. Cool completely.
- Beat cream cheese and butter until smooth.
- Mix in melted white chocolate. Gradually add powdered sugar, vanilla, and almond extract until fluffy.
- Slice cakes into 4 thin layers if desired for more filling.
- Spread frosting between each layer.
- Frost the outside of the cake smoothly.
- Press shredded coconut along the sides of the cake.
- Sprinkle toasted almonds around edges or on top.
- Pipe swirls of frosting and garnish with white chocolate shavings if desired.
Notes
- Ensure the butter and cream cheese are at room temperature for easier mixing.
- To toast almonds, place them in a dry skillet over medium heat until golden brown.
- For a richer flavor, use high-quality white chocolate.
