Description

A rich and decadent cake featuring layers of white chocolate, coconut, and almond flavors, perfect for any celebration.


Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter (softened)
  • 2 cups sugar
  • 4 large eggs
  • 1 tsp almond extract
  • 1 cup coconut milk (or whole milk)
  • ½ cup sour cream
  • 8 oz white chocolate, melted and cooled
  • 1 ½ cups cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 2 cups sweetened shredded coconut (toasted or plain)
  • ½ cup sliced almonds, lightly toasted
  • White chocolate shavings (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a medium bowl, whisk flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add almond extract.
  4. Alternate adding flour mixture with coconut milk and sour cream, beginning and ending with dry ingredients.
  5. Divide batter into pans and bake 30–35 minutes, or until a toothpick comes out clean. Cool completely.
  6. Beat cream cheese and butter until smooth.
  7. Mix in melted white chocolate. Gradually add powdered sugar, vanilla, and almond extract until fluffy.
  8. Slice cakes into 4 thin layers if desired for more filling.
  9. Spread frosting between each layer.
  10. Frost the outside of the cake smoothly.
  11. Press shredded coconut along the sides of the cake.
  12. Sprinkle toasted almonds around edges or on top.
  13. Pipe swirls of frosting and garnish with white chocolate shavings if desired.

  • Ensure the butter and cream cheese are at room temperature for easier mixing.
  • To toast almonds, place them in a dry skillet over medium heat until golden brown.
  • For a richer flavor, use high-quality white chocolate.
