- 1 ½ cups (300 g) light brown sugar, packed
- 2 large eggs

- 2 cups (250 g) all-purpose flour

- ½ cup watermelon puree (strained for smoothness)
- 2 tbsp sugar
- 1 tsp cornstarch (to thicken)
- Few drops pink/red food coloring (optional for vibrant sunset effect)
- ½ cup caramel sauce (homemade or store-bought)
Instructions
- In a saucepan, simmer watermelon puree, sugar, and cornstarch until slightly thickened. Let cool completely.
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch pan with parchment.
- Whisk together melted butter and brown sugar until smooth.
- Add eggs and vanilla, mixing well.
- Stir in flour, baking powder, and salt until just combined (do not overmix).
- Spread blondie batter evenly into the prepared pan.
- Drop spoonfuls of watermelon swirl over the top and gently swirl with a knife for a marbled effect.
- Bake for 25–30 minutes, until golden and set (a toothpick should come out with a few moist crumbs).
- Cool completely before cutting into squares.
- Drizzle with caramel sauce for the ‘sunset’ effect.
