  • ½ cup watermelon puree (strained for smoothness)
  • 2 tbsp sugar
  • 1 tsp cornstarch (to thicken)
  • Few drops pink/red food coloring (optional for vibrant sunset effect)
  • ½ cup caramel sauce (homemade or store-bought)

Instructions

  1. In a saucepan, simmer watermelon puree, sugar, and cornstarch until slightly thickened. Let cool completely.
  2. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch pan with parchment.
  3. Whisk together melted butter and brown sugar until smooth.
  4. Add eggs and vanilla, mixing well.
  5. Stir in flour, baking powder, and salt until just combined (do not overmix).
  6. Spread blondie batter evenly into the prepared pan.
  7. Drop spoonfuls of watermelon swirl over the top and gently swirl with a knife for a marbled effect.
  8. Bake for 25–30 minutes, until golden and set (a toothpick should come out with a few moist crumbs).
  9. Cool completely before cutting into squares.
