- 1 cup heavy cream (chilled)
- 1 cup milk
- 4 oz semisweet chocolate (chopped)
- 2 tbsp cocoa powder
- ¼ cup sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup fresh strawberries (pureed)
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp gelatin powder (or 1 sheet)
- 1 tbsp cold water
- Freeze-dried strawberry powder or grated chocolate (for garnish)
- Fresh strawberries (for decoration)
Instructions
- In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in milk until smooth.
- Cook over medium heat until thickened, stirring constantly (5–7 minutes).
- Remove from heat and stir in chopped chocolate and vanilla until melted and glossy.
- Cool slightly, then fold in whipped cream.
- Spoon into ramekins, filling halfway. Chill while preparing the strawberry layer.
- Bloom gelatin in 1 tbsp cold water for 5 minutes.
- In a small saucepan, combine strawberry puree, sugar, and lemon juice. Heat gently until warm, then stir in gelatin until dissolved.
- Let cool to room temperature.
- Pour gently over the chocolate layer in each cup. Smooth the top.
- Refrigerate for at least 3 hours or until set and creamy.
- Dust with strawberry powder or chocolate shavings. Garnish with a fresh strawberry for an elegant touch.
