Ingredients

  • 4 large egg yolks
  • ⅓ cup granulated sugar (or sweetener for low-carb)
  • 2 tbsp cornstarch (or arrowroot powder for gluten-free)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1 tbsp butter (for extra creaminess)
  • 1 cup fresh or frozen blackberries
  • 1 cup fresh or frozen raspberries
  • 2 tbsp sugar (or keto sweetener)
  • 1 tsp lemon juice
  • ½ tsp vanilla extract

Instructions

  1. In a saucepan, heat milk over medium heat until steaming but not boiling.
  2. In a bowl, whisk egg yolks, sugar, cornstarch, and salt until smooth and pale.
  3. Slowly pour half of the hot milk into the egg mixture while whisking constantly (to temper the eggs).
  4. Pour the tempered mixture back into the saucepan with the rest of the milk.
  5. Cook over medium heat, stirring constantly, until thickened (about 5–7 minutes).
  6. Remove from heat, stir in vanilla extract and butter (if using).
  7. Pour into serving cups or ramekins, cover with plastic wrap (to prevent a skin), and chill for at least 2 hours.
  8. In a small saucepan, combine berries, sugar, and lemon juice.
  9. Cook over medium heat for 5–8 minutes, stirring occasionally, until the berries soften and release their juices.
  10. Stir in vanilla extract, then let cool to room temperature.
  11. Spoon chilled custard into bowls.
  12. Top with a generous spoonful of berry compote and a few fresh berries for garnish.
  13. Serve immediately, or keep refrigerated until ready to enjoy.

Notes

  • For a richer custard, use heavy cream instead of milk.
  • Adjust sweetness of the compote based on the tartness of the berries.
