Description

A hearty stew featuring turkey Italian sausages and chicken thighs, packed with vegetables and seasoned to perfection.


Ingredients

  • 45 turkey Italian sausages
  • 4 chicken thighs
  • 2 tablespoons olive oil, plus more as needed
  • 1 yellow onion, diced
  • 1 large shallot, thinly sliced
  • 3 garlic cloves, smashed
  • 1 small fennel bulb, diced
  • 2 cups sliced mushrooms
  • 1 heaping cup crushed tomatoes or tomato sauce
  • 2 tablespoons tomato paste
  • 8 baby carrots, peeled
  • 28 ounces white beans, drained and rinsed
  • 32 ounces chicken broth
  • 2 bay leaves
  • 1 bunch fresh thyme, tied
  • 1 tablespoon harissa
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cinnamon
  • Salt and black pepper to taste
  • 1 tablespoon apple cider vinegar

Instructions

  1. Warm a large Dutch oven over medium-high heat. Lightly coat the turkey sausages with olive oil and brown them on all sides. Transfer to a plate.
  2. Add a bit more oil and brown the chicken thighs. Remove and set aside.
  3. Add another drizzle of oil to the pot. Cook the onion, shallot, fennel, garlic, and mushrooms for about 10 minutes, stirring often, until tender and lightly golden.
  4. Stir in the crushed tomatoes, tomato paste, broth, bay leaves, thyme, harissa, allspice, cinnamon, salt, and pepper. Bring to a gentle simmer and cook uncovered for 10 minutes.
  5. Return the browned sausages and chicken to the pot, nestling them into the sauce. Cover and cook on low heat for 20 minutes.
  6. Add the white beans and whole carrots. Let the stew simmer until the carrots soften slightly but still hold their shape.
  7. Stir in the apple cider vinegar and adjust seasoning. Remove the bay leaves and thyme bundle.
  8. Slice the sausages before serving. Ladle the stew into bowls and serve with bread, rice, or a simple green salad.

  • For added flavor, consider using homemade chicken broth.
