Description
A luscious no-bake dessert layered with creamy mascarpone, juicy mangoes, and soft sponge fingers soaked in tropical syrup — a taste of paradise in every bite!

- 2 large ripe mangoes, diced (plus extra for garnish)
- 1½ cups mascarpone cheese
- 1 cup heavy cream (chilled)
- ½ cup sweetened condensed milk
- ½ cup mango puree (fresh or canned)
- 1 teaspoon vanilla extract
- 2 packages (7 oz) ladyfinger biscuits (Savoiardi)
- ½ cup mango juice (or orange juice)
- 1 tablespoon rum or coconut milk (optional, for flavor)
- 1 tablespoon sugar
Instructions
- In a large bowl, beat the chilled heavy cream until soft peaks form.
- In another bowl, mix mascarpone cheese, condensed milk, vanilla, and mango puree until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fluffy and creamy.
- Combine mango juice, rum or coconut milk (if using), and sugar. Stir until the sugar dissolves.
- Dip each ladyfinger lightly in the syrup (don’t soak too long).
- Arrange a full layer of soaked ladyfingers in a square or rectangular dish.
- Spread half of the mango cream mixture over the ladyfingers.
- Add a layer of diced mangoes on top.
- Repeat with another layer of soaked ladyfingers, then the remaining cream.
- Smooth the top with a spatula.
- Cover and refrigerate for at least 6 hours (overnight gives the best texture).
- Spoon fresh diced mangoes on top before serving. Optionally drizzle mango puree or glaze for extra shine.
Notes
- For best results, chill overnight.
- Adjust sweetness by adding more or less sugar in the syrup.
- Use fresh mangoes for the best flavor.
