Ingredients

  • 1 ½ cups (150 g) graham cracker crumbs
  • ¼ cup (60 g) melted butter
  • 2 tbsp brown sugar
  • 450 g (16 oz) cream cheese, softened
  • ¾ cup (150 g) granulated sugar
  • 1 cup (240 ml) mango purée (fresh or canned)
  • ½ cup (120 ml) heavy cream
  • 3 large eggs, room temperature
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • ¾ cup (180 ml) mango purée (for glaze)
  • 1 tbsp sugar (for glaze)
  • 1 tsp cornstarch mixed with 1 tbsp water (for glaze)
  • Fresh mango cubes (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Mix graham crumbs, melted butter, and brown sugar until combined.
  3. Press firmly into the bottom of a 9-inch (23 cm) springform pan.
  4. Bake for 8–10 minutes, then let cool completely.
  5. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  6. Add mango purée, lemon juice, and vanilla, mixing until blended.
  7. Add eggs one at a time, mixing gently after each addition.
  8. Pour in heavy cream and mix just until smooth — do not overbeat.
  9. Pour the batter over the cooled crust.
  10. Place the pan in a water bath (wrap the base in foil to prevent leaks).
  11. Bake for 50–60 minutes, until edges are set but center is slightly jiggly.
  12. Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
  13. Refrigerate for at least 4 hours or overnight.
  14. In a saucepan, heat mango purée and sugar over medium heat.
  15. Add the cornstarch slurry and cook until thickened and glossy (about 3–4 minutes).
  16. Let cool to room temperature before pouring over the chilled cheesecake.
  17. Pour the mango glaze evenly over the cheesecake.
  18. Garnish with fresh mango cubes and mint leaves.
  19. Slice and enjoy this tropical paradise chilled!
