Description

These delightful tiramisu-inspired cookies combine the flavors of classic Italian tiramisu into a handheld treat. Soft ladyfinger-style cookies are sandwiched with a rich mascarpone cream and dusted with cocoa powder for an indulgent bite-size dessert.


Ingredients

  • 3 large eggs, separated
  • ½ cup granulated sugar, divided
  • ½ tsp vanilla extract
  • ¾ cup all-purpose flour
  • ¼ tsp baking powder
  • Pinch of salt
  • 1 cup heavy cream (cold)
  • 1 cup mascarpone cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp coffee liqueur (optional, or strong espresso)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, beat egg whites until soft peaks form. Gradually add half the sugar and beat until stiff peaks form.
  3. In another bowl, beat egg yolks with remaining sugar and vanilla until pale and creamy.
  4. Gently fold yolk mixture into the whites. Sift in flour, baking powder, and salt. Fold gently until combined.
  5. Pipe or spoon small rounds onto baking sheets.
  6. Bake for 10–12 minutes, until lightly golden. Cool completely.
  7. Beat heavy cream to stiff peaks.
  8. In a separate bowl, mix mascarpone, powdered sugar, vanilla, and coffee liqueur until smooth.
  9. Fold whipped cream into mascarpone mixture. Chill until ready to use.
  10. Spread or pipe mascarpone cream onto the flat side of a cookie.
  11. Top with another cookie to form a sandwich.
  12. Dust generously with cocoa powder.

Notes

  • For a stronger coffee flavor, use espresso instead of coffee liqueur.
  • Make sure the heavy cream is very cold for better whipping.
  • Store assembled cookies in the refrigerator for up to 2 days.
