Description
These delightful tiramisu-inspired cookies combine the flavors of classic Italian tiramisu into a handheld treat. Soft ladyfinger-style cookies are sandwiched with a rich mascarpone cream and dusted with cocoa powder for an indulgent bite-size dessert.

- 3 large eggs, separated
- ½ cup granulated sugar, divided
- ½ tsp vanilla extract
- ¾ cup all-purpose flour
- ¼ tsp baking powder
- Pinch of salt
- 1 cup heavy cream (cold)
- 1 cup mascarpone cheese
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp coffee liqueur (optional, or strong espresso)
- Unsweetened cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a bowl, beat egg whites until soft peaks form. Gradually add half the sugar and beat until stiff peaks form.
- In another bowl, beat egg yolks with remaining sugar and vanilla until pale and creamy.
- Gently fold yolk mixture into the whites. Sift in flour, baking powder, and salt. Fold gently until combined.
- Pipe or spoon small rounds onto baking sheets.
- Bake for 10–12 minutes, until lightly golden. Cool completely.
- Beat heavy cream to stiff peaks.
- In a separate bowl, mix mascarpone, powdered sugar, vanilla, and coffee liqueur until smooth.
- Fold whipped cream into mascarpone mixture. Chill until ready to use.
- Spread or pipe mascarpone cream onto the flat side of a cookie.
- Top with another cookie to form a sandwich.
- Dust generously with cocoa powder.
Notes
- For a stronger coffee flavor, use espresso instead of coffee liqueur.
- Make sure the heavy cream is very cold for better whipping.
- Store assembled cookies in the refrigerator for up to 2 days.
