  • 1 cup diced white or yellow onion
  • 1/4 cup all-purpose flour
  • 2 cups chicken or vegetable stock
  • 2 cups milk
  • 1 pound Yukon Gold or Russet potatoes, peeled and diced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup plain Greek yogurt or sour cream
  • Kosher salt and freshly-ground black pepper, to taste

Instructions

  1. Sauté the Base: Start by melting butter in a large stockpot or Dutch oven over medium-high heat. Add the diced turkey ham or beef sausage and cook until browned and slightly crispy. Remove and set aside for topping later. Add the diced onion to the pot and sauté for about 5 minutes until soft and translucent. Stir in the flour and cook for another minute to form a roux — this gives your soup that rich, velvety body.
  2. Add Liquids and Potatoes: Gradually whisk in the chicken or vegetable stock, followed by the milk. Stir well to prevent lumps. Add the diced potatoes and bring the mixture to a gentle boil.
  3. Simmer Until Tender: Reduce the heat to a simmer and let the potatoes cook uncovered for about 15 minutes, or until fork-tender. Give it a stir now and then to keep the bottom from sticking.
  4. Blend (Optional): If you prefer a thicker soup, use an immersion blender to purée some of the soup directly in the pot. Or transfer a portion to a blender and pulse until smooth, then stir it back in. Leave some chunks for texture.
  5. Stir in the Creamy Goodness: Lower the heat and stir in the shredded cheese, Greek yogurt (or sour cream), and cooked meat. Season with salt and black pepper to taste.
  6. Serve and Top: Ladle into bowls and top with your favorite fixings — a little extra cheese, green onions, a dollop of sour cream, or crispy turkey ham.
