Ingredients

  • ¾ cup (90 g) all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 4 large eggs, room temperature
  • ¾ cup (150 g) granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp strawberry purée (or 1 tsp strawberry extract)
  • Pink or red gel food coloring (optional)
  • 2 tbsp vegetable oil
  • 2 tbsp milk
  • 1 cup (240 ml) heavy cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • ¼ cup (60 g) strawberry jam or diced fresh strawberries
  • Fresh strawberries (for decoration)
  • Edible heart or flower sprinkles (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 10×15-inch (25×38 cm) jelly roll pan with parchment paper and lightly grease it.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In a large mixing bowl, beat eggs and sugar on high speed for about 5 minutes, until thick and pale.
  5. Add vanilla, strawberry purée, oil, and milk. Mix until smooth.
  6. Add a few drops of pink or red gel coloring if desired.
  7. Gently fold in the dry ingredients until just combined — don’t overmix.
  8. Pour the batter evenly into the prepared pan and smooth the top.
  9. Bake for 10–12 minutes, or until the top springs back when lightly touched.
  10. While still warm, carefully turn the cake out onto a clean kitchen towel dusted with powdered sugar.
  11. Peel off the parchment paper.
  12. Starting from the short end, roll up the cake with the towel and let it cool completely — this prevents cracks later.
  13. Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
  14. Gently fold in strawberry jam or diced strawberries.
  15. Unroll the cooled cake gently.
  16. Spread the strawberry whipped cream evenly across the surface.
  17. Roll it back up tightly (without the towel).
  18. Trim the edges for a neat finish.
  19. Dust with powdered sugar, pipe whipped cream on top, or add fresh strawberries and heart sprinkles for a romantic look.
