A fluffy strawberry sponge rolled with whipped cream and strawberry jam, perfect for romantic occasions.

- ¾ cup (90 g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 4 large eggs, room temperature
- ¾ cup (150 g) granulated sugar
- 1 tsp vanilla extract
- 2 tbsp strawberry purée (or 1 tsp strawberry extract)
- Pink or red gel food coloring (optional)
- 2 tbsp vegetable oil
- 2 tbsp milk
- 1 cup (240 ml) heavy cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
- ¼ cup (60 g) strawberry jam or diced fresh strawberries
- Fresh strawberries (for decoration)
- Edible heart or flower sprinkles (for decoration)
Instructions
- Preheat oven to 350°F (175°C).
- Line a 10×15-inch (25×38 cm) jelly roll pan with parchment paper and lightly grease it.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, beat eggs and sugar on high speed for about 5 minutes, until thick and pale.
- Add vanilla, strawberry purée, oil, and milk. Mix until smooth.
- Add a few drops of pink or red gel coloring if desired.
- Gently fold in the dry ingredients until just combined — don’t overmix.
- Pour the batter evenly into the prepared pan and smooth the top.
- Bake for 10–12 minutes, or until the top springs back when lightly touched.
- While still warm, carefully turn the cake out onto a clean kitchen towel dusted with powdered sugar.
- Peel off the parchment paper.
- Starting from the short end, roll up the cake with the towel and let it cool completely — this prevents cracks later.
- Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- Gently fold in strawberry jam or diced strawberries.
- Unroll the cooled cake gently.
- Spread the strawberry whipped cream evenly across the surface.
- Roll it back up tightly (without the towel).
- Trim the edges for a neat finish.
- Dust with powdered sugar, pipe whipped cream on top, or add fresh strawberries and heart sprinkles for a romantic look.
