A delicious cake made with fresh strawberries and crushed pineapple.

- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup crushed pineapple (drained)
- 1 cup fresh strawberries, diced
- 1 cup powdered sugar
- 2–3 tablespoons pineapple juice or milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or bundt pan.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture. Fold in the crushed pineapple and diced strawberries gently.
- Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely. Mix glaze ingredients and drizzle over the cake before serving.
Notes
- For a thicker glaze, use less pineapple juice or milk.
- Ensure the fruit is well-drained to prevent the cake from becoming soggy.
