- 1 cup salted butter, softened
- 1/2 cup confectioners’ sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup mini chocolate morsels
- 1/2 cup toffee pieces
Instructions
- Preheat and Prepare
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside. - Cream the Butter and Sugar
Add the softened salted butter and confectioners’ sugar to a mixing bowl. Beat on medium-high speed until light, smooth, and creamy. - Add the Vanilla
Pour in the vanilla extract. Mix briefly until fully blended and fragrant. - Incorporate the Flour
Reduce mixer speed to low. Gradually add the flour, mixing just until a soft dough forms. - Fold in Chocolate and Toffee
Use a spatula to gently fold in the mini chocolate morsels and toffee pieces. Stop as soon as everything is evenly distributed. - Shape the Dough
Scoop about one tablespoon of dough and roll into a 1-inch ball. Place dough balls on the prepared baking sheet, spacing them about 1 inch apart. - Flatten and Chill if Needed
Lightly press down each dough ball to slightly flatten the top. Chill the tray for 5–10 minutes if the dough feels warm. - Bake and Cool
Bake for 12–14 minutes, until the edges are lightly golden and set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For best results, use room temperature butter.
- Make sure not to over-bake the cookies to keep them soft.
