- 1 ½ cups pastry cream or vanilla pudding (optional filling)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk, mixing until smooth.
- Pour into loaf pan and bake for 45–55 minutes, or until a toothpick comes out clean. Cool completely.
- In a saucepan, heat sugar over medium heat until melted and amber. Stir in butter, then carefully whisk in cream. Add a pinch of salt and stir until smooth. Set aside to cool slightly.
- Line a baking sheet with parchment. In a saucepan, combine sugar, corn syrup, and water. Heat over medium without stirring until mixture reaches 300°F (hard crack stage).
- Remove from heat and divide into bowls if using multiple colors. Add gel food coloring quickly and pour onto baking sheet. Let cool, then break into shard-like pieces.
- If filling, slice the loaf and spread or pipe pastry cream in the center before reassembling.
- Drizzle the top of the loaf cake with caramel. Decorate with candy glass shards, pressing them gently into the top.
- Slice carefully with a sharp knife, avoiding the shards. Serve as a dramatic dessert centerpiece.
