Ingredients

  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk (room temperature)
  • ½ cup granulated sugar (for caramel drizzle)
  • 3 tablespoons unsalted butter (for caramel drizzle)
  • ¼ cup heavy cream (for caramel drizzle)
  • Pinch of salt (for caramel drizzle)
  • 2 cups granulated sugar (for candy glass shards)
  • ½ cup light corn syrup (for candy glass shards)
  • 1 cup water (for candy glass shards)
  • Gel food coloring (red, blue, purple, or clear variations)
  • 1 ½ cups pastry cream or vanilla pudding (optional filling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and milk, mixing until smooth.
  5. Pour into loaf pan and bake for 45–55 minutes, or until a toothpick comes out clean. Cool completely.
  6. In a saucepan, heat sugar over medium heat until melted and amber. Stir in butter, then carefully whisk in cream. Add a pinch of salt and stir until smooth. Set aside to cool slightly.
  7. Line a baking sheet with parchment. In a saucepan, combine sugar, corn syrup, and water. Heat over medium without stirring until mixture reaches 300°F (hard crack stage).
  8. Remove from heat and divide into bowls if using multiple colors. Add gel food coloring quickly and pour onto baking sheet. Let cool, then break into shard-like pieces.
  9. If filling, slice the loaf and spread or pipe pastry cream in the center before reassembling.
  10. Drizzle the top of the loaf cake with caramel. Decorate with candy glass shards, pressing them gently into the top.
  11. Slice carefully with a sharp knife, avoiding the shards. Serve as a dramatic dessert centerpiece.
