Ingredients

Scale
  • 1 lb (450 g) fresh strawberries (hulled and halved)
  • ½ cup (100 g) sugar
  • 2 tablespoons lemon juice
  • ½ cup (120 ml) strawberry jam (optional, for extra richness)
  • 16 oz (450 g) mascarpone cheese (room temp)
  • 1 cup (240 ml) heavy cream (chilled)
  • ½ cup (100 g) sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfinger biscuits (about 2428 pieces)
  • ½ cup (120 ml) strawberry juice or strawberry syrup (from macerated berries)
  • 2 tablespoons orange liqueur or strawberry liqueur (optional)
  • Fresh strawberries (sliced, for garnish)
  • Powdered sugar (for dusting)

Instructions

  1. In a bowl, toss strawberries with sugar and lemon juice.
  2. Let sit 15 minutes until juicy. Reserve the syrup for dipping ladyfingers.
  3. Beat mascarpone cheese with sugar and vanilla until smooth.
  4. In another bowl, whip heavy cream to soft peaks.
  5. Gently fold whipped cream into mascarpone mixture.
  6. Quickly dip ladyfingers into the strawberry syrup (don’t oversoak).
  7. Arrange a layer of dipped ladyfingers in the bottom of a baking dish.
  8. Spread half the mascarpone cream over the biscuits.
  9. Add a layer of macerated strawberries (and optional jam).
  10. Repeat layers, finishing with cream and strawberries on top.
  11. Cover and refrigerate at least 4 hours (preferably overnight) to set.
  12. Garnish with fresh strawberry slices and dust with powdered sugar before serving.
