Delicious Strawberry Shortcake Cheesecake Bites that combine the flavors of cheesecake and strawberry shortcake in a bite-sized treat.
Ingredients

- 8 oz cream cheese (softened)
- 1/3 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup heavy cream (whipped to stiff peaks)
- 12 Golden Oreos (crushed into crumbs)
- 1/2 cup freeze-dried strawberries (crushed into powder) or 2 tbsp strawberry gelatin powder
- 2 tbsp unsalted butter, melted
Instructions
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped cream until fluffy.
- Scoop small portions (1–2 tbsp) and roll into balls.
- Place on a baking sheet lined with parchment and freeze for at least 1 hour.
- Mix Golden Oreo crumbs, strawberry powder (or gelatin), and melted butter until crumbly.
- Spread mixture on a plate or shallow dish.
- Roll frozen cheesecake balls in the crumb mixture until fully coated.
- Place back in freezer for 15 minutes to set.
- Enjoy straight from the freezer for a firmer bite, or let soften slightly for a creamy texture.
Notes
- For a stronger strawberry flavor, use freeze-dried strawberries instead of gelatin.
- These bites can be stored in the freezer for up to a month.
