  • ¼ cup (50 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries, diced
  • 1 tbsp sugar
  • 1 tsp lemon juice
  • ¼ cup chopped pistachios
  • Whole strawberries (for topping)

Instructions

  1. In a small bowl, mix shortbread crumbs with melted butter and sugar. Press the mixture evenly into the bottom of serving glasses or dessert bowls. Chill for 10–15 minutes to firm up.
  2. In a bowl, beat mascarpone, powdered sugar, and vanilla until smooth. In a separate bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the mascarpone mixture until light and creamy. Chill until ready to assemble.
  3. Combine diced strawberries with sugar and lemon juice. Let sit for 10 minutes to release juices.
  4. Layer the components in glasses: Crumb base, a layer of sweetened strawberries, a generous layer of mascarpone cream, more strawberries on top, and sprinkle with chopped pistachios. Garnish each serving with a whole strawberry.
