Description

A delightful Strawberry Crunch Layer Cake that combines the flavors of strawberry and vanilla with a crunchy topping for a delicious dessert experience.


Ingredients

  • 1 box strawberry cake mix
  • 1 box vanilla (or white) cake mix
  • Ingredients called for on the cake mix boxes (eggs, oil, water)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • 34 tbsp heavy cream (to adjust consistency)
  • 20 Golden Oreos (crushed into crumbs)
  • 1/2 cup freeze-dried strawberries (crushed) or strawberry Jell-O powder
  • 1/4 cup unsalted butter, melted

Instructions

  1. Prepare strawberry cake mix and vanilla cake mix according to package directions. Bake each in round cake pans (8 or 9-inch). Cool completely on wire racks before frosting.
  2. Beat cream cheese and butter together until smooth and fluffy. Gradually add powdered sugar, mixing until incorporated. Add vanilla and heavy cream until fluffy and spreadable.
  3. Mix crushed Golden Oreos, crushed freeze-dried strawberries (or Jell-O powder), and melted butter until crumbly. Spread on a baking sheet and bake at 350°F (175°C) for 5–7 minutes. Let cool.
  4. Place one vanilla cake layer on a cake board, spread frosting on top. Add a strawberry cake layer, frost again. Continue stacking alternating layers. Frost the outside of the cake fully with cream cheese frosting. Press strawberry crunch topping onto the sides and top of the cake.
  5. Chill for 30 minutes to set, then slice and enjoy!

Notes

  • Ensure the cake layers are completely cooled before frosting to prevent melting.
  • Adjust the amount of heavy cream in the frosting for desired consistency.
  • For a more intense strawberry flavor, use freeze-dried strawberries instead of Jell-O powder.
