Description
This luscious dessert combines a buttery vanilla cookie crust with creamy strawberry and vanilla cheesecake layers, fresh strawberries, and whipped topping. The perfect summer cake that’s both refreshing and indulgent!

- 1 ½ cups (150 g) vanilla wafer or golden Oreo crumbs
- ¼ cup (60 g) melted butter
- 1 tbsp sugar
- 450 g (16 oz) cream cheese, softened
- 1 cup (240 ml) heavy whipping cream
- ½ cup (100 g) granulated sugar
- 1 tsp vanilla extract
- 1 cup (200 g) chopped fresh strawberries
- ½ cup (120 ml) strawberry purée (or strawberry jam warmed and thinned)
- A few drops of red or pink food coloring (optional)
- 1 ½ cups (360 ml) whipped cream or whipped topping
- 1 cup (150 g) fresh strawberries, sliced
- Powdered sugar for dusting
- ½ cup crushed vanilla cookies (optional)
- ½ cup freeze-dried strawberries, crushed (optional)
- 2 tbsp melted butter (optional)
Instructions
- Mix cookie crumbs, melted butter, and sugar until combined. Press firmly into the bottom of a 9×9-inch (23×23 cm) square pan. Chill in the refrigerator while preparing the filling.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well. In another bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy. Divide the mixture in half: To one half, fold in strawberry purée and food coloring (for the pink layer). Leave the other half plain (for the white layer).
- Spread the white cream layer evenly over the crust. Add a layer of chopped strawberries. Spread the pink strawberry layer on top. Smooth the surface and refrigerate for at least 4 hours or overnight.
- Whip or pipe cream on top of the chilled cake. Garnish with fresh strawberry slices and a sprinkle of cookie-strawberry crunch if desired. Dust with powdered sugar for an elegant finish.
Notes
- For best results, chill the cake overnight to allow the flavors to meld.
- Feel free to adjust the sweetness by adding more or less sugar to the cheesecake layers.
