Description

A delightful Strawberry & Cream Swiss Roll recipe that combines a light sponge cake with a creamy filling and fresh strawberries.


Ingredients

  • 4 large eggs, room temperature
  • 100 g (½ cup) granulated sugar
  • 1 tsp vanilla extract
  • 100 g (¾ cup) all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp milk
  • 200 ml (¾ cup) heavy cream, chilled
  • 2 tbsp powdered sugar
  • 100 g cream cheese (optional, for stability)
  • 150 g strawberry jam
  • Extra strawberry jam (for topping)
  • Fresh strawberries (for garnish)
  • Whipped cream (for decoration)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar with an electric mixer until pale, thick, and tripled in volume (about 5 minutes). Add vanilla.
  3. Sift in flour, baking powder, and salt. Gently fold with a spatula until just combined.
  4. Add milk and fold again (batter should be airy). Spread evenly in prepared pan.
  5. Bake 10–12 minutes, until golden and springy to touch.
  6. While still warm, invert sponge onto a clean tea towel dusted with powdered sugar. Peel off parchment paper.
  7. Roll cake up with the towel (short side) while warm to prevent cracks. Let cool completely.
  8. Whip heavy cream with powdered sugar (and cream cheese if using) until stiff peaks form.
  9. Unroll cooled sponge. Spread a thin layer of strawberry jam, then the whipped cream. Roll cake back up tightly.
  10. Spread a little strawberry jam on top. Pipe swirls of whipped cream. Garnish with fresh strawberries and dust with powdered sugar.

  • Use a light hand when folding in the flour to maintain the airy texture.
  • Chill the heavy cream for better whipping results.
