Description
Soft sugar cookies with a surprise creamy filling inside, topped with strawberry glaze and sparkling sugar crystals.

- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- ¼ cup sour cream
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2–3 tbsp strawberry puree (fresh or thawed frozen strawberries, blended)
- ½ tsp lemon juice
- Sparkling sugar or coarse sanding sugar (for garnish)
Instructions
- Beat cream cheese, powdered sugar, and vanilla until smooth. Transfer to a piping bag or small spoon. Keep chilled.
- In a medium bowl, whisk flour, baking powder, baking soda, and salt. In a large bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, and sour cream; mix until smooth. Slowly fold in dry ingredients until dough forms. Chill for 30 minutes.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment. Scoop about 1 ½ tbsp dough, flatten slightly. Add ½ tsp cream filling in the center, then cover with another small piece of dough. Seal edges well. Place on baking sheet, leaving space between cookies.
- Bake 10–12 minutes, until edges are lightly golden. Let cool completely before glazing.
- Mix powdered sugar, strawberry puree, and lemon juice until smooth and pourable. Dip cooled cookies in glaze or drizzle on top. Sprinkle with sparkling sugar.
