Description

Soft sugar cookies with a surprise creamy filling inside, topped with strawberry glaze and sparkling sugar crystals.


Ingredients

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • ¼ cup sour cream
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 23 tbsp strawberry puree (fresh or thawed frozen strawberries, blended)
  • ½ tsp lemon juice
  • Sparkling sugar or coarse sanding sugar (for garnish)

Instructions

  1. Beat cream cheese, powdered sugar, and vanilla until smooth. Transfer to a piping bag or small spoon. Keep chilled.
  2. In a medium bowl, whisk flour, baking powder, baking soda, and salt. In a large bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, and sour cream; mix until smooth. Slowly fold in dry ingredients until dough forms. Chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Line a baking sheet with parchment. Scoop about 1 ½ tbsp dough, flatten slightly. Add ½ tsp cream filling in the center, then cover with another small piece of dough. Seal edges well. Place on baking sheet, leaving space between cookies.
  4. Bake 10–12 minutes, until edges are lightly golden. Let cool completely before glazing.
  5. Mix powdered sugar, strawberry puree, and lemon juice until smooth and pourable. Dip cooled cookies in glaze or drizzle on top. Sprinkle with sparkling sugar.
