Description

A delicious and visually stunning Strawberry Brownie Cheesecake that combines rich brownie layers with creamy cheesecake and fresh strawberries.


Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 24 oz (680 g) cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • Pink/red food coloring (for the strawberry layer)
  • ½ cup strawberry puree (fresh or frozen strawberries blended)
  • 1 cup diced strawberries
  • ½ cup strawberry jam (slightly warmed)
  • Whipped cream (white + pink, piped swirls)
  • Pink sprinkles or candy pearls

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a springform pan.
  2. In a bowl, whisk melted butter, sugar, eggs, and vanilla.
  3. Add cocoa, flour, salt, and baking powder; stir until combined.
  4. Spread batter evenly in the pan and bake 15 minutes. Set aside to cool slightly.
  5. Beat cream cheese and sugar until smooth and creamy.
  6. Add sour cream, eggs, and vanilla. Mix until just combined (do not overbeat).
  7. Divide batter into two bowls: Strawberry layer: Stir in strawberry puree + a few drops of pink food coloring. Vanilla layer: Leave plain.
  8. Pour the strawberry cheesecake mixture over the brownie base. Smooth evenly.
  9. Gently pour vanilla cheesecake mixture on top.
  10. Place springform pan in a water bath (wrap pan with foil and set inside a larger pan with hot water).
  11. Bake at 325°F (160°C) for 55–65 minutes, until center is slightly jiggly but set.
  12. Cool to room temperature, then refrigerate at least 4 hours (preferably overnight).
  13. Spread warmed strawberry jam over the chilled cheesecake.
  14. Sprinkle diced strawberries on top.
  15. Pipe alternating pink and white whipped cream swirls.
  16. Add pink sprinkles for a festive touch.
  17. Slice and serve chilled.
