- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup cocoa powder
- ½ cup all-purpose flour

- 24 oz (680 g) cream cheese (softened)
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 2 tsp vanilla extract
- Pink/red food coloring (for the strawberry layer)
- ½ cup strawberry puree (fresh or frozen strawberries blended)
- 1 cup diced strawberries
- ½ cup strawberry jam (slightly warmed)
- Whipped cream (white + pink, piped swirls)
- Pink sprinkles or candy pearls
Instructions
- Preheat oven to 350°F (175°C). Grease and line a springform pan.
- In a bowl, whisk melted butter, sugar, eggs, and vanilla.
- Add cocoa, flour, salt, and baking powder; stir until combined.
- Spread batter evenly in the pan and bake 15 minutes. Set aside to cool slightly.
- Beat cream cheese and sugar until smooth and creamy.
- Add sour cream, eggs, and vanilla. Mix until just combined (do not overbeat).
- Divide batter into two bowls: Strawberry layer: Stir in strawberry puree + a few drops of pink food coloring. Vanilla layer: Leave plain.
- Pour the strawberry cheesecake mixture over the brownie base. Smooth evenly.
- Gently pour vanilla cheesecake mixture on top.
- Place springform pan in a water bath (wrap pan with foil and set inside a larger pan with hot water).
- Bake at 325°F (160°C) for 55–65 minutes, until center is slightly jiggly but set.
- Cool to room temperature, then refrigerate at least 4 hours (preferably overnight).
- Spread warmed strawberry jam over the chilled cheesecake.
- Sprinkle diced strawberries on top.
- Pipe alternating pink and white whipped cream swirls.
- Add pink sprinkles for a festive touch.
- Slice and serve chilled.
