- ½ cup corn syrup (light)
- 4 envelopes (1 oz total) unflavored gelatin
- Food coloring (optional, to enhance vibrancy)
- 1 tsp flavored extract (optional, e.g., lemon, orange, or raspberry)
Instructions
- Prepare the Pan: Grease a 9×13-inch baking dish or line it with parchment paper. Lightly coat with cooking spray for easy release.
- Bloom the Gelatin: In a large saucepan, combine fruit juice and gelatin. Let sit for 5 minutes to allow gelatin to bloom.
- Cook the Mixture: Add sugar, water, and corn syrup to the pan. Stir over medium heat until sugar dissolves. Bring to a gentle boil and cook for about 20 minutes, stirring occasionally, until thickened. Remove from heat and stir in extract and food coloring (if using).
- Set the Gumdrops: Pour mixture into the prepared dish and smooth the top. Let sit at room temperature overnight (or at least 8 hours) until fully firm.
- Cut & Coat: Loosen edges with a knife and turn out onto a sugared surface. Cut into cubes with a sharp knife or use small cookie cutters for shapes. Roll each gumdrop in sugar until fully coated.
