Description

Delicious cookies perfect for Valentine’s Day, topped with pink frosting and festive sprinkles.


Ingredients

  • 1/2 cup butter (Salted or unsalted, softened)
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg white
  • 1 tsp vanilla
  • 1 1/3 cup all purpose flour (plus 1 tbsp)
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter (softened)
  • 1 cup powdered sugar
  • 1 tbsp cream
  • 1 tsp vanilla extract
  • pink gel food coloring
  • Valentine’s Day sprinkles

Instructions

  1. Start by preheating the oven to 350F, then line a large baking sheet with parchment paper and set aside.
  2. In a stand mixer, cream the butter, granulated sugar, and brown sugar together using a paddle attachment until light in color and fluffy. Add in the egg white and the vanilla and mix again for 30 seconds or until fully incorporated.
  3. Add in the flour, baking soda, baking powder, and salt and mix just until the flour disappears. Using a small cookie scooper, scoop out equally sized cookie dough balls into the baking sheet.
  4. Bake the cookies for 8 minutes, pull them out and let them rest on the cookie sheet for 5-10 minutes then transfer to a cooling rack. Enjoy immediately or store in an airtight container.
  5. Cream the butter in a bowl until light and fluffy.
  6. Add in the powdered sugar, vanilla extract, and cream and whip again until fluffy. Add in pink food coloring and whip again.
  7. Frost each cooled down cookie then top with sprinkles and enjoy!
