Description

Deliciously sweet medjool dates stuffed with peanut butter and topped with vegan chocolate for a sweet treat.


Ingredients

  • 8 medjool dates
  • ¼ cup peanut butter
  • ¼ cup chopped peanuts (for filling and topping)
  • ½ cup vegan chocolate chips
  • 1 teaspoon refined coconut oil (optional)

Instructions

  1. Prep the dates: If your dates still have the pit in them, cut a slice down the middle of each date (don’t cut all the way through) and remove the pit.
  2. Stuff the dates: Add a spoonful of peanut butter into the center of each date, then add a sprinkle of chopped peanuts. Place on a parchment-lined plate or tray and freeze for 20 minutes to firm up.
  3. Melt the chocolate: In a microwave-safe bowl, melt the chocolate until smooth, adding coconut oil if needed to thin the chocolate.
  4. Coat the dates: Use a fork to dip each date into the melted chocolate, fully coating it. Place on the parchment-lined plate and sprinkle with chopped peanuts before the chocolate fully sets.
  5. Chill: Place the dates in the fridge for 5 minutes to let the chocolate harden. Optional (but highly recommended): add a sprinkle of flaky sea salt for that sweet-salty bite.
