Description

This creamy, cheesy casserole cooks low and slow for ultimate comfort. With tender potatoes, smoky ham, and a rich cheese sauce, it’s a satisfying family meal that’s perfect for busy nights or brunch gatherings.


Ingredients

  • 6 medium potatoes, peeled and thinly sliced
  • 2 cups (about 250 g) diced cooked ham
  • 1 small onion, finely chopped
  • 2 cups (240 g) shredded cheddar cheese (divided)
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1 cup (240 ml) milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1 tbsp butter (for greasing the slow cooker)

Instructions

  1. Grease the inside of your slow cooker with butter or nonstick spray.
  2. Place half of the sliced potatoes in the bottom of the slow cooker.
  3. Add half the ham, onions, and 1 cup of cheese.
  4. Repeat layers with remaining potatoes, ham, onions, and cheese.
  5. In a bowl, whisk together the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  6. Pour evenly over the layered ingredients.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and cheese is melted through.
  8. Stir gently before serving to mix the sauce evenly.
  9. Sprinkle extra cheese on top just before serving, if desired.
  10. Garnish with fresh parsley or green onions.

Notes

  • For a spicier version, add diced jalapeños or red pepper flakes.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish can be made ahead of time and cooked later.
