Description
Crispy, cheesy potatoes baked in creepy skull shapes for the ultimate Halloween party snack. Golden on the outside, soft and gooey on the inside—perfectly spooky and delicious!

- 6 medium russet potatoes
- 2 tbsp olive oil
- 1 cup shredded cheddar cheese (or mozzarella)
- 2 tbsp sour cream
- 2 tbsp butter
- 2 tbsp chopped fresh parsley (plus more for garnish)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and dry potatoes. Prick with a fork and bake for 45–50 minutes until tender. Let cool slightly.
- Slice potatoes in half and scoop out most of the flesh into a bowl, leaving a thin layer to hold shape. Mash with butter, sour cream, cheese, garlic powder, onion powder, salt, and pepper until creamy.
- If using a skull-shaped silicone mold, press the potato mixture into each cavity. Otherwise, refill potato skins, carving light “skull” features with a knife for effect. Top with extra cheese.
- Place filled potatoes back in the oven for 10–15 minutes until cheese is melted and tops are golden.
- Sprinkle with parsley and serve hot for a frightfully fun side dish or appetizer.
Notes
- For a spicier kick, add some diced jalapeños to the filling.
- These can be made ahead of time and reheated before serving.
