Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup Skittles (sorted by color: red, orange, yellow, green, purple)
  • ½ cup water (divided, 23 tbsp per color batch)
  • Food coloring (optional, to boost vibrancy)
  • Rainbow sprinkles
  • Crushed Skittles (optional)

Instructions

  1. In a bowl, whisk together heavy cream, milk, sugar, vanilla, and salt until sugar dissolves.
  2. Chill the mixture for 2–3 hours (or overnight) in the refrigerator.
  3. Divide Skittles by color groups. In small saucepans, add each color batch with 2–3 tbsp water. Heat gently until Skittles dissolve into syrup (strain if needed). Add a drop of matching food coloring to intensify the swirl color. Let cool.
  4. Pour chilled ice cream base into an ice cream maker and churn until soft-serve consistency (20–25 minutes).
  5. Transfer half of the churned ice cream into a freezer container. Drizzle different Skittles syrups on top, swirling lightly with a knife. Add the rest of the ice cream and repeat. Sprinkle with rainbow sprinkles before freezing for extra fun.
  6. Freeze for 4–6 hours until firm.
  7. Scoop into bowls or cones, garnish with more sprinkles or crushed Skittles, and taste the rainbow swirl!
