Delicious and colorful Skittles Rainbow Blondie Bars that are perfect for any occasion.
Ingredients

- 1 cup (225 g) unsalted butter, melted
- 1 ½ cups (300 g) light brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup Skittles (divided, some whole and some roughly chopped)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 or 9×9-inch baking pan with parchment paper.
- In a large bowl, whisk together melted butter and brown sugar until smooth.
- Add eggs and vanilla, mixing until fully incorporated.
- Stir in flour, baking powder, and salt until just combined (do not overmix).
- Gently fold in ¾ cup Skittles (reserving the rest for topping).
- Spread batter evenly into the prepared pan.
- Sprinkle remaining Skittles over the top, pressing them lightly into the batter.
- Bake for 25–30 minutes, until golden brown and set (a toothpick inserted should come out with moist crumbs, not wet batter).
- Let cool completely in the pan before slicing into bars.
Notes
- For a chewier texture, do not overbake.
- Feel free to mix in other candies or nuts for added flavor.
