  • ¾ cup (150 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (120 g) all-purpose flour

  • 1 cup (240 ml) heavy whipping cream
  • ¼ cup (30 g) powdered sugar
  • 1 tsp vanilla extract
  • ½ cup (120 ml) salted caramel sauce (store-bought or homemade)
  • ¾ cup (180 ml) salted caramel sauce (for drizzling)
  • 1 cup (240 ml) whipped cream (for decorating)
  • Rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 10×15-inch (25×38 cm) jelly roll pan with parchment paper.
  3. In a bowl, beat eggs and sugar for 5 minutes until thick, pale, and doubled in volume.
  4. Add vanilla and milk; mix gently.
  5. Sift in flour, baking powder, and salt. Fold in with a spatula until smooth.
  6. Pour into the pan and spread evenly.
  7. Bake for 10–12 minutes, or until the cake springs back when touched.
  8. While still warm, turn the cake onto a clean kitchen towel dusted with powdered sugar.
  9. Peel off the parchment paper.
  10. Starting from the short end, roll the cake up with the towel inside.
  11. Let it cool completely (about 30–40 minutes).
  12. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  13. Gently fold in the salted caramel sauce — creating a light swirl effect if desired.
  14. Carefully unroll the cooled cake.
  15. Spread the caramel whipped cream evenly over the surface.
  16. Drizzle lightly with more caramel sauce.
  17. Roll the cake back up tightly (without the towel).
  18. Wrap in plastic wrap and refrigerate for at least 2 hours to set.
  19. Place the chilled roll on a serving platter.
  20. Drizzle generously with warm caramel sauce.
  21. Pipe whipped cream rosettes on top.
  22. Add colorful sprinkles for a festive finish.
