Delicious and healthy Rhubarb & Coconut Bliss Balls, perfect for a sweet treat.
Ingredients

- 1 cup (120 g) fresh or frozen rhubarb, chopped
- 2 tbsp sugar (adjust to taste)
- 1 tsp lemon juice
- 1 tsp cornstarch mixed with 1 tsp water
- 1½ cups (120 g) desiccated coconut (plus extra for rolling)
- ½ cup (120 g) condensed milk
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a small saucepan, combine rhubarb, sugar, and lemon juice.
- Cook over medium heat for 5–7 minutes until rhubarb softens and releases juices.
- Stir in cornstarch slurry and cook until thickened.
- Cool completely, then form small cubes or spoonfuls and freeze for 30 minutes (to make them easier to handle).
- In a bowl, combine coconut, condensed milk, melted coconut oil, vanilla, and salt.
- Mix until a soft, moldable dough forms. Chill for 10 minutes if too sticky.
- Take a small amount of coconut mixture and flatten it in your palm.
- Place a frozen rhubarb cube in the center and wrap the coconut around it to form a ball.
- Roll each ball in extra desiccated coconut to coat.
- Refrigerate for at least 1 hour before serving for the perfect texture.
Notes
- Adjust sugar based on the tartness of the rhubarb.
- Ensure the rhubarb is well-cooked for a smoother filling.
- These bliss balls can be stored in the refrigerator for up to a week.
