Description

Delicious and healthy Rhubarb & Coconut Bliss Balls, perfect for a sweet treat.


Ingredients

  • 1 cup (120 g) fresh or frozen rhubarb, chopped
  • 2 tbsp sugar (adjust to taste)
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tsp water
  • 1½ cups (120 g) desiccated coconut (plus extra for rolling)
  • ½ cup (120 g) condensed milk
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan, combine rhubarb, sugar, and lemon juice.
  2. Cook over medium heat for 5–7 minutes until rhubarb softens and releases juices.
  3. Stir in cornstarch slurry and cook until thickened.
  4. Cool completely, then form small cubes or spoonfuls and freeze for 30 minutes (to make them easier to handle).
  5. In a bowl, combine coconut, condensed milk, melted coconut oil, vanilla, and salt.
  6. Mix until a soft, moldable dough forms. Chill for 10 minutes if too sticky.
  7. Take a small amount of coconut mixture and flatten it in your palm.
  8. Place a frozen rhubarb cube in the center and wrap the coconut around it to form a ball.
  9. Roll each ball in extra desiccated coconut to coat.
  10. Refrigerate for at least 1 hour before serving for the perfect texture.
