Description

A delightful dessert combining the rich flavors of red velvet cake and creamy cheesecake, topped with a fresh strawberry sauce.


Ingredients

  • 2 tbsp cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring (gel preferred)
  • 16 oz (450 g) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries (sliced, plus whole for garnish)
  • ½ cup sugar
  • 2 tbsp cornstarch
  • ½ cup water
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a springform pan (9-inch).
  2. Whisk flour, cocoa, baking soda, and salt together.
  3. In another bowl, cream butter and sugar until fluffy. Add egg, buttermilk, vanilla, vinegar, and red food coloring. Mix well.
  4. Gradually fold in dry ingredients.
  5. Pour into pan and bake for 18–20 minutes, until a toothpick comes out clean. Let cool.
  6. Beat cream cheese and sugar until smooth.
  7. Add eggs one at a time, then sour cream and vanilla. Mix until creamy.
  8. Pour over cooled red velvet cake layer.
  9. Bake at 325°F (160°C) for 40–45 minutes, until center is set but slightly jiggly.
  10. Cool completely, then refrigerate at least 4 hours or overnight.
  11. In a saucepan, combine sugar, cornstarch, and water. Stir until smooth.
  12. Add strawberries and cook over medium heat until thickened and glossy.
  13. Stir in lemon juice, then let cool.
  14. Spread strawberry topping evenly over chilled cheesecake.
  15. Garnish with whole strawberries.
  16. Slice and serve chilled.

  • For best results, use gel food coloring for a vibrant red color.
  • Make sure the cream cheese is at room temperature for a smooth cheesecake layer.
  • Chill the cheesecake overnight for the best texture and flavor.
