- 1 box red velvet cake mix (or homemade red velvet batter)
- Ingredients listed on the cake mix box (typically eggs, oil, and water)
- 4 oz (115 g) semi-sweet chocolate, chopped
- 4 tbsp unsalted butter
- 2 tbsp powdered sugar
- 1 egg yolk
- 1 tsp vanilla extract
- Powdered sugar, for dusting (optional)
- Whipped cream or vanilla ice cream (optional)
Instructions
- In a heatproof bowl, melt chocolate and butter together (microwave in 20-second bursts or use a double boiler).
- Stir until smooth.
- Whisk in powdered sugar, egg yolk, and vanilla until glossy.
- Chill slightly to thicken.
- Mix red velvet cake batter according to package directions (or prepare homemade batter).
- Line a muffin tin with cupcake liners.
- Spoon 2 tablespoons of batter into each liner.
- Add 1 tablespoon of lava filling to the center.
- Cover with more batter until cups are about ¾ full.
- Bake at 400°F (200°C) for about 12 minutes.
- The edges should be set but the center should remain soft.
- Let cupcakes cool for 2–3 minutes.
- Dust with powdered sugar.
- Serve warm so the molten chocolate flows out when cut.
Notes
- Do not overbake; otherwise, the centers will set and won’t be molten.
- Best served warm, but you can reheat briefly in the microwave.
- Try adding a scoop of vanilla ice cream for a classic pairing.
