Description

Red Velvet Lava Cupcakes are moist red velvet cakes with a molten chocolate center that flows with every bite, making them an irresistible treat.


Ingredients

  • 1 box red velvet cake mix (or homemade red velvet batter)
  • Ingredients listed on the cake mix box (typically eggs, oil, and water)
  • 4 oz (115 g) semi-sweet chocolate, chopped
  • 4 tbsp unsalted butter
  • 2 tbsp powdered sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting (optional)
  • Whipped cream or vanilla ice cream (optional)

Instructions

  1. In a heatproof bowl, melt chocolate and butter together (microwave in 20-second bursts or use a double boiler).
  2. Stir until smooth.
  3. Whisk in powdered sugar, egg yolk, and vanilla until glossy.
  4. Chill slightly to thicken.
  5. Mix red velvet cake batter according to package directions (or prepare homemade batter).
  6. Line a muffin tin with cupcake liners.
  7. Spoon 2 tablespoons of batter into each liner.
  8. Add 1 tablespoon of lava filling to the center.
  9. Cover with more batter until cups are about ¾ full.
  10. Bake at 400°F (200°C) for about 12 minutes.
  11. The edges should be set but the center should remain soft.
  12. Let cupcakes cool for 2–3 minutes.
  13. Dust with powdered sugar.
  14. Serve warm so the molten chocolate flows out when cut.

Notes

  • Do not overbake; otherwise, the centers will set and won’t be molten.
  • Best served warm, but you can reheat briefly in the microwave.
