- 4 large eggs

- 2 tsp red food coloring (gel preferred)
- ¼ cup buttermilk
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 cup heavy whipping cream (whipped to stiff peaks)

- Cream cheese frosting (or ganache drizzle)
- Fresh raspberries & blueberries
- Chocolate crumbs or crushed cookies
- Mint leaves (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a jelly roll pan (10×15 in.) with parchment paper.
- In one bowl, whisk flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until pale and fluffy (3–4 min).
- Add oil, vanilla, vinegar, food coloring, and buttermilk. Mix well.
- Gently fold in dry ingredients until smooth.
- Spread batter evenly in pan and bake 12–15 minutes.
- While warm, invert cake onto a clean towel dusted with powdered sugar.
- Peel parchment and roll cake (with towel) starting from short end. Let cool completely.
- Beat cream cheese with powdered sugar until smooth.
- Fold in whipped cream and vanilla until fluffy.
- Unroll cake and spread filling evenly.
- Roll back up tightly (like sushi). Wrap in plastic wrap and chill at least 1–2 hours.
- Drizzle with cream cheese frosting or chocolate ganache.
- Sprinkle with chocolate crumbs.
- Garnish with raspberries, blueberries, and mint leaves.
- Slice like sushi rolls and serve chilled.

- Ensure the cake is completely cool before spreading the filling to prevent it from melting.
- Use gel food coloring for a more vibrant red color.
- Chilling the roll helps it maintain its shape when slicing.
