Description

A delightful dessert that combines the rich flavors of red velvet cake with a creamy cheesecake filling, all rolled up like sushi for a fun and unique presentation.


Ingredients

  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 4 large eggs
  • ¾ cup granulated sugar
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp distilled white vinegar
  • 2 tsp red food coloring (gel preferred)
  • ¼ cup buttermilk
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup heavy whipping cream (whipped to stiff peaks)
  • 1 tsp vanilla extract
  • Cream cheese frosting (or ganache drizzle)
  • Fresh raspberries & blueberries
  • Chocolate crumbs or crushed cookies
  • Mint leaves (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan (10×15 in.) with parchment paper.
  2. In one bowl, whisk flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until pale and fluffy (3–4 min).
  4. Add oil, vanilla, vinegar, food coloring, and buttermilk. Mix well.
  5. Gently fold in dry ingredients until smooth.
  6. Spread batter evenly in pan and bake 12–15 minutes.
  7. While warm, invert cake onto a clean towel dusted with powdered sugar.
  8. Peel parchment and roll cake (with towel) starting from short end. Let cool completely.
  9. Beat cream cheese with powdered sugar until smooth.
  10. Fold in whipped cream and vanilla until fluffy.
  11. Unroll cake and spread filling evenly.
  12. Roll back up tightly (like sushi). Wrap in plastic wrap and chill at least 1–2 hours.
  13. Drizzle with cream cheese frosting or chocolate ganache.
  14. Sprinkle with chocolate crumbs.
  15. Garnish with raspberries, blueberries, and mint leaves.
  16. Slice like sushi rolls and serve chilled.
