Ingredients
Scale
- 3 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 2 ¼ tsp active dry yeast (1 packet)
- ½ tsp salt
- ¾ cup warm milk (110°F / 43°C)
- 2 tbsp unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup raspberry jam (seedless for smooth filling)
- 2 cups powdered sugar
- 3–4 tbsp milk
- 1 tsp vanilla extract
- Oil for frying (vegetable or canola), enough for 2–3 inches depth
Instructions
- Make the Dough: In a small bowl, dissolve yeast in warm milk with 1 tsp sugar. Let sit until foamy (5–10 minutes). In a large bowl, whisk flour, remaining sugar, and salt. Add yeast mixture, eggs, butter, and vanilla. Mix until a soft dough forms. Knead on a floured surface (8–10 minutes) or with a dough hook (5 minutes) until smooth and elastic. Place in a greased bowl, cover, and let rise until doubled (about 1 hour).
- Shape the Donuts: Punch dough down and roll out to about ½-inch thickness. Cut circles with a 3-inch cutter. Place on parchment-lined trays, cover, and let rise another 30–40 minutes until puffy.
- Fry: Heat oil to 350°F (175°C). Fry donuts in batches, 1–2 minutes per side until golden. Drain on paper towels or a wire rack.
- Fill: Fit a piping bag with a small tip and fill with raspberry jam. Insert tip into the side of each donut and squeeze gently to fill.
- Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Dip warm donuts in glaze and let set on a wire rack.
Notes
- Ensure the oil is at the correct temperature for frying to achieve a golden color.
- Use seedless raspberry jam for a smoother filling.
- Donuts are best enjoyed fresh but can be stored in an airtight container for a few days.
