- 1 cup (240 ml) buttermilk
- ½ cup (120 g) raspberry puree (fresh or frozen raspberries blended and strained)
- 1 cup (125 g) fresh raspberries, lightly tossed in flour
- 1 cup (230 g) unsalted butter, softened (for frosting)
- 3 ½ cups (450 g) powdered sugar, sifted
- ¾ cup (75 g) unsweetened cocoa powder
- ½ tsp salt (for frosting)
- ½ cup (120 ml) heavy cream (more if needed)
- 2 tsp vanilla extract (for frosting)
- Fresh raspberries (for decoration)
- Shaved chocolate or chocolate curls (for decoration)
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well, then stir in vanilla.
- Mix in dry ingredients alternately with buttermilk and raspberry puree.
- Gently fold in raspberries.
- Divide batter between pans and bake for 30–35 minutes, until a toothpick comes out clean.
- Cool completely before frosting.
- Beat butter until creamy for the frosting.
- Add powdered sugar, cocoa powder, and salt. Mix well.
- Gradually add cream and vanilla, beating until smooth and fluffy.
- Place one cake layer on a serving plate, spread frosting on top.
- Add second cake layer and cover cake with remaining frosting.
- Smooth with a spatula or create swirls.
- Garnish with fresh raspberries and chocolate curls.
- Slice and enjoy!
