Rainbow Mango-Lime Lava Bars are a delightful dessert featuring a creamy cheesecake base layered with vibrant mango, lime, and raspberry purées, topped with a crumbly coconut topping.


Ingredients

  • ½ cup unsalted butter, melted
  • 2 tbsp sugar
  • 16 oz (450 g) cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • ½ cup mango purée
  • ½ cup lime curd (or lemon curd with lime zest)
  • ½ cup raspberry purée (strained for smoothness)
  • 12 drops natural food coloring (green for lime, yellow for mango, pink for raspberry) if desired
  • ½ cup flour
  • ¼ cup brown sugar
  • 3 tbsp cold butter, cubed
  • ¼ cup shredded coconut
  • Extra shredded coconut for garnish
  • Fresh mango or berries for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar.
  3. Press into the bottom of a greased 9×9-inch baking dish. Bake for 8–10 minutes.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing until just combined.
  6. Stir in vanilla and sour cream.
  7. Pour over the baked crust.
  8. Drop spoonfuls of mango purée, lime curd, and raspberry purée over the cheesecake mixture.
  9. Swirl gently with a knife for a marbled rainbow effect, leaving some thicker pockets for gooey “lava.”
  10. Mix flour, brown sugar, and butter with a fork until crumbly.
  11. Stir in shredded coconut.
  12. Sprinkle evenly over the top.
  13. Bake for 35–40 minutes, until set at the edges but slightly wobbly in the center.
  14. Cool completely, then chill for at least 3 hours before cutting.
  15. Slice into bars.
  16. Garnish with shredded coconut and extra fruit.
