- 16 oz (450 g) cream cheese, softened
- ¾ cup sugar
- 2 large eggs

- ½ cup sour cream
- ½ cup mango purée
- ½ cup lime curd (or lemon curd with lime zest)
- ½ cup raspberry purée (strained for smoothness)
- 1–2 drops natural food coloring (green for lime, yellow for mango, pink for raspberry) if desired
- ½ cup flour
- ¼ cup brown sugar
- 3 tbsp cold butter, cubed
- ¼ cup shredded coconut
- Extra shredded coconut for garnish
- Fresh mango or berries for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and sugar.
- Press into the bottom of a greased 9×9-inch baking dish. Bake for 8–10 minutes.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing until just combined.
- Stir in vanilla and sour cream.
- Pour over the baked crust.
- Drop spoonfuls of mango purée, lime curd, and raspberry purée over the cheesecake mixture.
- Swirl gently with a knife for a marbled rainbow effect, leaving some thicker pockets for gooey “lava.”
- Mix flour, brown sugar, and butter with a fork until crumbly.
- Stir in shredded coconut.
- Sprinkle evenly over the top.
- Bake for 35–40 minutes, until set at the edges but slightly wobbly in the center.
- Cool completely, then chill for at least 3 hours before cutting.
- Slice into bars.
- Garnish with shredded coconut and extra fruit.
