Description

This creamy, coconut-infused tiramisu is inspired by the beloved Raffaello candies. Layers of ladyfingers are soaked in coconut milk, then topped with a luscious mascarpone cream and finished with coconut truffles and shredded coconut. It’s a dreamy no-bake dessert for coconut lovers!


Ingredients

  • 16 oz (450 g) mascarpone cheese
  • 1 ¼ cups heavy cream (cold)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup shredded coconut (unsweetened or sweetened, to taste)
  • 1 package (approx. 24) ladyfinger cookies (savoiardi)
  • 1 ½ cups coconut milk (or coconut cream, thinned with a little milk)
  • 2 tbsp coconut liqueur (optional, e.g., Malibu)
  • Raffaello candies (or homemade coconut truffles) for garnish
  • Shredded coconut, for sprinkling

Instructions

  1. In a large bowl, whip heavy cream until stiff peaks form.
  2. In another bowl, beat mascarpone, powdered sugar, vanilla, and shredded coconut until smooth.
  3. Fold whipped cream into the mascarpone mixture until creamy and fluffy.
  4. Pour coconut milk into a shallow dish.
  5. Quickly dip each ladyfinger into the milk (don’t oversoak).
  6. In a square dish, layer soaked ladyfingers.
  7. Spread half of the cream mixture on top.
  8. Add another layer of soaked ladyfingers.
  9. Finish with the remaining cream mixture.
  10. Pipe or spoon cream domes on top.
  11. Roll small scoops of cream in shredded coconut to resemble truffles (or use store-bought Raffaello).
  12. Sprinkle generously with shredded coconut.
  13. Refrigerate for at least 4 hours (overnight is best) before slicing and serving.

Notes

  • For a stronger coconut flavor, use coconut cream instead of coconut milk.
  • Chilling overnight enhances the flavors and texture.
  • Feel free to adjust the sweetness by adding more or less powdered sugar.
