Description
This creamy, coconut-infused tiramisu is inspired by the beloved Raffaello candies. Layers of ladyfingers are soaked in coconut milk, then topped with a luscious mascarpone cream and finished with coconut truffles and shredded coconut. It’s a dreamy no-bake dessert for coconut lovers!

- 16 oz (450 g) mascarpone cheese
- 1 ¼ cups heavy cream (cold)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup shredded coconut (unsweetened or sweetened, to taste)
- 1 package (approx. 24) ladyfinger cookies (savoiardi)
- 1 ½ cups coconut milk (or coconut cream, thinned with a little milk)
- 2 tbsp coconut liqueur (optional, e.g., Malibu)
- Raffaello candies (or homemade coconut truffles) for garnish
- Shredded coconut, for sprinkling
Instructions
- In a large bowl, whip heavy cream until stiff peaks form.
- In another bowl, beat mascarpone, powdered sugar, vanilla, and shredded coconut until smooth.
- Fold whipped cream into the mascarpone mixture until creamy and fluffy.
- Pour coconut milk into a shallow dish.
- Quickly dip each ladyfinger into the milk (don’t oversoak).
- In a square dish, layer soaked ladyfingers.
- Spread half of the cream mixture on top.
- Add another layer of soaked ladyfingers.
- Finish with the remaining cream mixture.
- Pipe or spoon cream domes on top.
- Roll small scoops of cream in shredded coconut to resemble truffles (or use store-bought Raffaello).
- Sprinkle generously with shredded coconut.
- Refrigerate for at least 4 hours (overnight is best) before slicing and serving.
Notes
- For a stronger coconut flavor, use coconut cream instead of coconut milk.
- Chilling overnight enhances the flavors and texture.
- Feel free to adjust the sweetness by adding more or less powdered sugar.
